The Milk & Honey Distillery in Israel has multiple warehouses for storing its Whisky casks during maturation and as part of the Apex series they explore different maturation locations to obtain vastly different flavour profiles from their offerings. In this particular offering, it spent a year next to the Dead Sea, and the effect it has on the Whisky is quite dramatic…dramatic good or bad? Let’s find out…

My exploration of Tamdhu concludes with a review of their 15 Year Single Malt. Renowned as a Sherry Bomb to rival Glendronach and Macallan, I test that reputation. I also dive into Saladin Boxes for malting, and the reinvention of Tamdhu as a Single Malt brand, tracing the history of the 15 Year offering. Does this make me smile? Hell yes it does…and then some.

Having heard that Tamdhu were known for their Sherried Scotches and being a fan of this type of Whisky, I had to grab a three pack of samples to try. The first one to review is their 12 Year Single Malt offering, but without anything definitive on whether it was Chill-Filtered I set up my own, rather rudimentary experiment to try and determine if it was Chill-Filtered before I opened the sample bottle. What did I learn? It might surprise you…but more than likely not…

AOB are a small Distillery in Mullumbimby in Northern NSW, only a 2.5 hour drive from where I live. I’d never heard of them before until I tried this sample from an Advent Calendar I picked up last year. Their Single Malt Ausskey was matured in a Pinot Noir cask and the result left me wanting more.

Amber Lane are an Australian Distillery a hour North of Sydney and they make some unusual Ausskey’s, including the Equinox. It’s fair to say that this Ausskey shocked me at just how good it was. I look at their still design, the Mary Rose, as well as their brief history and their insistence on longer aging and how it’s paying off for them. This one, is a cracker!
